Little Custard Tarts

Custard tarts make the most delightful afternoon tea.

INGREDIENTS

  • 1 1/2 sheets butter puff pastry sheets, cut into 12 squares
  • 2 eggs, lightly beaten
  • 1/4 cup sugar
  • 3/4 cup milk
  • Vanilla extract, to taste
  • Quince or fig jam, blueberries, maple syrup or chopped chocolate for flavouring

METHOD

  1. Press pastry into 12 buttered, 2 tablespoon- capacity muffin pans.
  2. Beat eggs, sugar, milk and vanilla together.
  3. Place 1/2 teaspoon of desired flavouring into each pastry case.
  4. Pour over custard and bake at 230°C for 10 minutes.
  5. Reduce temperature to 190°C and bake for a further 15 minutes or until custard is golden and cooked
