Lemon Delicious

Serves 4


  • 45g Australian butter
  • 1 tablespoon grated lemon rind
  • 1/2 cup caster sugar
  • 4 eggs, separated
  • 1/3 cup plain flour
  • 3/4 cup Australian milk
  • 1/3 cup lemon juice
  • 1/2 cup toasted coconut
  • Australian thickened cream, for serving

  1. Combine butter, lemon rind, caster sugar and egg yolks in a mixing bowl. Beat until creamy. Add flour, milk and lemon juice. Gently fold in softly beaten egg whites. Spoon into 4 buttered 1 cup capacity microwave dishes, top with toasted coconut. Cook on Medium/Low (30%) on a rack for 4 minutes, or until set. Stand a further 2 minutes, and serve with pure Australian cream.
