Layered Smoked Salmon, Brie and Rocket Salad

  • 200g smoked salmon, thinly sliced
  • 100g rocket leaves
  • 1 large Spanish onion, cut into slivers
  • 250g Australian brie cheese, cut into thin slices
  • 1 tablespoon capers, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon chopped parsley
  • freshly ground black pepper, to taste
  • rye bread, for serving

  1. 1. Layer smoked salmon, rocket, onion and brie onto four serving plates.
  2. 2. Combine capers, oil, parsley and pepper in a bowl and drizzle over each stack.
  3. 3. Serve with rye bread.
