Trim and Terrific Beef Lasagne

This healthier version of lasagne will be popular with whole family. Enjoy with a large green salad.

INGREDIENTS

  • cooking oil spray
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • 500g premium extra trim beef mince
  • 850g canned no added salt diced tomatoes
  • 2 tablespoons no added salt tomato paste
  • 2 tablespoons finely chopped fresh oregano
  • 2 tablespoons finely chopped fresh basil
  • 500g low fat cottage cheese
  • 250g frozen spinach, thawed and excess liquid well drained
  • 1/2 cup fresh basil, chopped, extra
  • 200g instant lasagne sheets
  • 100g grated 50% reduced fat cheddar cheese
  • green salad, for serving

METHOD

  1. Lightly spray a frypan with cooking oil spray. Saute onions and garlic until soft. Stir in beef mince and cook until well browned.
  2. Stir in undrained tomatoes, tomato paste, herbs and simmer for 30 minutes or until most of the liquid has been absorbed. Combine the cottage cheese, spinach and extra basil in a separate bowl.
  3. Place 1/3 of lasagne sheets over the base of a 2 litre capacity lasagne dish. Cover with 1/3 of the beef mixture and 1/3 of the cottage cheese mixture. Repeat layers twice more and sprinkle with cheddar cheese. Bake at 180°C for 30 minutes, cover with foil and then bake for a further 30 minutes. Serve.
