Lamb Kebabs

Serves 6


  • 3 lamb fillets, cut into cubes
  • 24 cherry tomatoes
  • 1/2 cup unsweetened pineapple pieces
  • 1/2 green capsicum
  • 1/4 red capsicum
  • 100g Australian reduced fat cheddar cheese, cubed
  • 2 tablespoons Australian non-fat yogurt
  • 2 teaspoons sweet chilli sauce
  • 1/2 mango, pureed
  • cooked rice, for serving

  1. Soak 12 wooden skewers in warm water for 1-2 hours. Thread lamb, tomatoes, pineapple and capsicums onto 12 wooden skewers. Barbecue or grill kebabs for 5 minutes on each side or until meat is cooked through. Place 2 cubes of cheese on each end of the kebabs. To make sauce, combine yogurt, sweet chilli sauce and pureed mango. Serve kebabs on a bed of rice drizzled with sauce.
