Lady Grey Shortbread Sandwiches with Western Star Butter

makes 10 sandwiches


  • 200g Western Star Unsalted Butter, softened
  • 1/2 cup caster sugar
  • 2 cups plain flour
  • 1 tablespoon loose leaf lady or earl grey tea leaves
  • 125g Western Star Unsalted Butter, extra, softened
  • 1 teaspoon finely grated orange rind
  • 2 cups pure icing sugar, sifted
  • 1 tablespoon freshly squeezed orange juice

  1. 1. Using an electric mixer, beat butter and sugar
  2. until very pale and fluffy (see our video at
  3. for tips).
  4. Reduce speed to low and gently beat in flour
  5. and tea leaves until a soft dough forms.
  6. 2. Divide the mixture in half and shape into logs
  7. along the centre of two large sheets of cling film.
  8. Roll up dough in cling film and squeeze out excess
  9. air, tie off the ends like a bon-bon, roll firmly to form
  10. a cylinder shape with 4cm diameter and refrigerate
  11. until firm.
  12. 3. Unwrap chilled dough, carefully slice into 1.5 cm
  13. rounds and arrange on a baking paper lined tray.
  14. Bake at 170°C for 12-15 minutes. Cool completely
  15. on a wire rack before filling.
  16. 4. For buttercream filling, beat extra butter until very
  17. pale and creamy, add orange rind and gradually beat
  18. in icing sugar, until very fluffy, beat in orange juice
  19. until smooth.
  20. 5. Sandwich shortbreads together with buttercream.

Tips / Handy Hints

Biscuits will keep for 1 week in a cool dark place.
