Jumping Beans Pasta Salad

Ingredients

  • 1 cup Australian reduced fat natural yogurt
  • 2 tablespoons reduced fat mayonnaise
  • 1 teaspoon reduced salt taco seasoning or mexican spice mix
  • 250g small pasta shapes, cooked and drained
  • 1x 400g can salt reduced 3 bean mix, drained and well rinsed
  • 1x 185g can tuna chunks in spring water, drained
  • 1 cup frozen corn kernels, thawed
  • 1 red capsicum, chopped
  • 3 spring onions, finely sliced
  • 1 cup grated Australian reduced fat cheddar cheese

Method

  1. 1. Stir together the yogurt, mayonnaise and seasoning. Set aside.
  2. 2. Combine the remaining ingredients in a large bowl. Add the dressing and toss to coat evenly.
  3. 3. Spoon into 10 individual containers for serving.

Tips / Handy Hints

For adventurous eaters, add some chopped avocado or coriander to this salad. This salad will keep well refrigerated for 3-4 days. 75c per serve
