Jumping Beans Pasta Salad

Try this jumping bean salad today.

INGREDIENTS

  • 1 cup reduced fat natural yoghurt
  • 2 tablespoons reduced fat mayonnaise
  • 1 teaspoon reduced salt taco seasoning or mexican spice mix
  • 250g small pasta shapes, cooked and drained
  • 1x 400g can salt reduced 3 bean mix, drained and well rinsed
  • 1x 185g can tuna chunks in spring water, drained
  • 1 cup frozen corn kernels, thawed
  • 1 red capsicum, chopped
  • 3 spring onions, finely sliced
  • 1 cup grated reduced fat cheddar cheese

METHOD

  1. Stir together the yoghurt, mayonnaise and seasoning. Set aside.
  2. Combine the remaining ingredients in a large bowl. Add the dressing and toss to coat evenly.
  3. Spoon into 10 individual containers for serving.

HANDY TIPS

For adventurous eaters, add some chopped avocado or coriander to this salad. This salad will keep well refrigerated for 3-4 days. 75c per serve
