Joggers' Ginger Bread

  • 100g Australian butter
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1/2 cup golden syrup
  • 1/2 cup Australian milk
  • 1 cup chopped pitted dates
  • 1 1/2 cups plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • 3/4 cup stewed apple
  • Australian butter, extra, for serving

  1. Cream butter and sugar until light and fluffy. Add egg and beat well. Stir in golden syrup, milk and dates. Sift together dry ingredients and stir into mixture. Lightly butter and line the base of a 14cm x 23cm loaf tin. Spoon half the mixture into the pan. Spread with apple then cover with remaining mixture. Bake at 160oC for 1 hour 20 minutes or until cooked. Serve hot or cold, spread with butter.
