Individual Plum Clafoutis

Ingredients

  • 1 x 425g can dark plums, drained and stoned
  • 1 tablespoon brown sugar
  • 2 tablespoons cherry brandy
  • 3 eggs
  • 1/4 cup brown sugar, extra
  • 1/4 cup self-raising flour
  • 1 teaspoon mixed spice
  • 1 1/4 cups Australian cream
  • 1/4 cup crushed nuts
  • whipped Australian cream, for serving

Method

  1. Place plums in the base of a buttered 18cm diametre pie dish. Sprinkle with sugar and cherry brandy. Beat eggs and extra sugar until creamy, add flour, mixed spice and cream combining well. Pour over the plums and sprinkle with crushed nuts. Cook on Medium/High (70%) for 8-10 minutes. Allow to stand 5 minutes before serving with whipped cream.
