Individual Cream Cheese Festive Fruit Cakes

Ingredients

  • 1 cup sultanas
  • 1/2 cup raisins
  • 1/2 cup currants
  • 1/2 cup chopped dried apricots
  • 1 cup chopped glace cherries
  • 1/2 cup mixed peel
  • 1/4 cup brandy
  • 80g Australian unsalted butter
  • 125g Australian cream cheese
  • 3/4 cup caster sugar
  • 2 eggs
  • 1 1/4 cups rice flour, sifted
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon bicarbonate of soda
  • 1/4 cup chopped mixed nuts
  • vanilla custard, for serving

Method

  1. 1. Soak dried fruit in brandy for 2 hours.
  2. 2. Cream butter, cream cheese and sugar together until light and fluffy. Beat in eggs onat a time, beating well between each addition. Fold in remaining ingredients and soaked fruit.
  3. 3. Spoon mixture into 12 buttered 1/2 cup capacity muffin pans. Bake at 160°C for 35-45 minutes. Serve with vanilla custard.
