Individual Cheesecakes

Serves 8


  • 250g Australian smooth ricotta cheese
  • 200g Australian low fat yogurt
  • 125ml pureed fruit
  • 15g gelatine
  • 40ml hot water
  • 8 Marie biscuits

  1. Beat cheese and yogurt until smooth. Add fruit and mix well. Dissolve gelatine in water then add to cheese mixture and mix thoroughly. Pour into 8, 1/2 cup jelly moulds. Lighly press a biscuit on top of each and refrigerate until set. Carefully unmould each and decorate with fresh fruit.
  2. N.B. Any flavoured yogurt or puree of fruit may be used.
