Iced Cucumber Soup

Serves 6


  • 1 cucumber, peeled, seeded and chopped
  • 1 medium green pepper, seeded and chopped
  • 1 clove garlic, crushed
  • juice of 1 lemon
  • 1 teaspoon sugar
  • 600ml Australian buttermilk
  • salt and pepper, to taste

  1. Place cucumber, green pepper, garlic, lemon juice and sugar in a blender and blend until smooth. Add buttermilk and blend thoroughly. Season to taste with salt and pepper. Refrigerate before serving.
