Ice Cream Filled Choux Puff with Seasonal Berries

  • 1 large choux puff
  • 1 scoop Australian strawberry or raspberry ice cream
  • 1 scoop Australian vanilla ice cream
  • seasonal berries (strawberries, raspberries)
  • redcurrant jelly
  • raspberry leaf, for garnish

  1. Split choux puff in half and fill with a scoop each of strawberry and vanilla ice cream and some berries. Arrange extra berries alongside as a garnish. Drizzle berries with warmed redcurrant jelly and garnish with a raspberry leaf.
