Ice Cream Cookie Sandwiches

Ingredients

  • 2 cups self raising flour
  • 1/2 cup cocoa
  • 1/4 cup caster sugar
  • 125g Australian butter, cubed
  • 1 egg, lightly beaten
  • 2/3 cup Australian sour cream
  • 1 litre Australian ice cream (eg.chocolate ripple)
  • icing sugar, for dusting

Method

  1. 1. Combine the flour, cocoa and sugar in a food processor and blend until combined. Add butter and blend until evenly distributed. Add egg and sour cream and blend lightly until the mixture forms a ball.
  2. 2. Roll out to 1cm thickness, between sheets of greaseproof paper. Cut into rounds using an 8-10cm cutter and place on an oven tray. Bake at 220°C for 15-20 minutes. Allow to cool. To serve, sandwich chocolate cookies together with scoops of ice cream and dust with icing sugar.
