Hurry Curry Salad

Serves 6


  • 1 cup macaroni, cooked
  • 1 small green pepper, diced
  • 1 medium carrot, diced
  • 6 spring onions, sliced
  • 100g bean shoots
  • 1 x 310g can mandarin segments, drained
  • 1/2 cup Australian light sour cream
  • 2 teaspoons lemon juice
  • 1 teaspoon curry powder
  • seasonings to taste

  1. Combine all ingredients together except dressing. Chill thoroughly. Add dressing and toss through salad just before serving. Serve as a meal by itself or as an accompaniment to cold meat.
  2. DRESSING - Beat all ingredients together thoroughly. Chill well. (The flavour of this dressing develops if made the day before).
