Hunza Pie

Ingredients

  • 30g Australian butter
  • 4 spring onions, chopped
  • 100g green beans, chopped
  • 1/4 cup red capsium, finely diced
  • 1 carrot, peeled and grated
  • 1 tablespoon hot water
  • 1 cup cooked brown rice
  • 1 1/2 cups grated Australian tasty cheddar cheese
  • 1 cup canned asparagus cuts, drained
  • 3 eggs, lightly beaten
  • 1/4 cup Australian cream
  • freshly ground black pepper
  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Australian Parmesan cheese

Method

  1. Combine butter, spring onions, beans, capsicum and carrot and water in a large mixing bowl. Cover and cook on High (100%) for 3 minutes. Stir in rice, tasty cheese, asparagus, eggs and cream. Season with freshly ground black pepper. Spoon into a buttered 22cm microwave ring dish. Sprinkle with pine nuts and parmesan. Cook on High (100%) for 6 minutes. Reduce power to Medium/Low ( 40%) and cook for a further 3 minutes.
