Honey Rice Cakes

Ingredients

  • 90g Australian butter
  • 1/2 cup honey
  • 1/2 teaspoon grated lemon rind
  • 2 eggs
  • 1/2 cup short grain rice, cooked
  • 1 1/4 cups dates, roughly chopped
  • 1 1/4 cups wholemeal self-raising flour
  • 1/2 teaspoon ground cloves

Method

  1. Cream butter, honey and rind together. Gradually beat in eggs. Fold in rice, dates, flour and cloves. Divide mixture between 24 paper patty cases and place on flat tray. Bake at 190C for 20 minutes.
