Honey Glazed Chicken

Serves 4


  • 125g butter, softened
  • finely grated rind of one small lemon
  • 1 tablespoon honey
  • 1 teaspoon dried rosemary leaves or 2 teaspoons fresh leaves
  • pepper to taste
  • 1 medium chicken

  1. Blend butter, lemon rind, honey, rosemary and pepper together until smooth. Spread 1/3 over top of chicken. Bake at 180oC for 1 1/4 hours. Whilst cooking, brush chicken with pan juices. Cover with foil when well browned. Spoon remaining honey butter into a small serving bowl. Spread over each portion of chicken for a melting sauce. Serve with baked zucchini, carrots and onions also tossed in honey butter.
