Honey Glazed Banana Bread

1 loaf


  • 2 cups wholemeal self raising flour
  • 2 tablespoons unprocessed bran
  • 1/4 teaspoon bicarbonate of soda
  • 60g Australian butter
  • 3/4 cup caster sugar
  • 200g Australian curd-style cottage cheese
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/2 cup honey

  1. Sift flour, bran and soda together, adding the coarser particles left in the sieve. Cream butter and sugar together until light and fluffy, add cottage cheese. Gradually beat in the eggs, and fold in flour and bananas alternately. Spoon into a buttered and lined 20cm x 15cm loaf tin and bake at 180°C for 1 hour. Turn out and allow to cool completely.
  2. For the honey glaze, place honey in a small saucepan and bring to the boil. Simmer for about 10 minutes until a soft toffee forms. Use to glaze banana bread.
