Makes 200g


  • 2 cups Australian cream (35% milkfat)
  • 1/4 teaspoon salt (optional)
  • 4 ice cubes, crushed

  1. Place cream and salt in a food processor or electric mixer and whip for 3 minutes. Add 4 crushed ice cubes and whip until butter forms a ball and buttermilk has separated from the mass. Drain off buttermilk and reserve in the refrigerator for drinking or cooking. Place butter into a bowl filled with ice water and knead. When the water is unclear replace and continue kneading until the water is clear. Drain off the water and using a wooden spoon press out any excess liquid. Shape butter into a block and store in the refrigerator or air tight container. Use as required.
