Herbed Onion Flan

Serves 6


  • 1 sheet frozen shortcrust pastry, thawed
  • 20g Australian butter
  • 2 large onions, chopped
  • 2 eggs
  • 1 cup Australian natural yogurt
  • 1 teaspoon dried mixed herbs
  • salt and cracked black pepper, to taste
  • 1 cup grated Australian cheddar cheese

  1. Use pastry to line a 23cm quiche dish. Melt butter and saute the onion. Beat eggs, yogurt, herbs and seasonings together, add the onion and cheese and pour into flan. Bake at 200C for 10 minutes. Reduce oven to 180C and bake a further 30 minutes. Allow to stand for 5 minutes before serving.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
