Hearty Vegetable Slice

Serves 8


  • 1 cup chicken stock
  • 500g pumpkin, peeled and chopped
  • 500g potato, peeled and chopped
  • 1/2 cup rice, cooked
  • 3 eggs, lightly beaten
  • 125g Australian processed cheddar cheese, grated

  1. Bring stock to the boil. Add the pumpkin and potato and cook for 20 minutes or until tender. Drain, mash, then mix in remaining ingredients. Spread into a buttered dish and bake at 180C for 30 minutes. Allow to cool slightly before serving to children. Sprinkle with grated parmesan and freshly ground black pepper for adults. Can be served with crusty bread or with chicken as a meal. N.B. - Any vegetables may be used e.g. carrots, peas, etc.
