Hawaiian Banana Cake

1 x 20cm round cake


  • 125g Australian butter
  • 1 cup caster sugar
  • 2 eggs
  • 1 cup mashed banana
  • 1 3/4 cups plain flour
  • 1 teaspoon bi carbonate of soda
  • 1 teaspoon baking powder
  • 1/4 cup Australian sour cream
  • 1 cup unsalted mixed nuts

  1. Cream butter and sugar until light and fluffy. Gradually beat in the eggs. Beat in mashed banana. Sift together flour, soda and baking powder and fold into mixture together with sour cream and nuts. Spoon into a buttered and lined 20cm round cake tin and bake at 180C for 60-65 minutes.
