Guacamole Rolls

  • 100g Australian cottage cheese
  • 1 avocado (100g)
  • 1 teaspoon lemon juice
  • 1 teaspoon chilli sauce
  • 2 sheets pita bread
  • 150g cooked skinless chicken,diced
  • 1 large tomato (200g)
  • 2 lettuce leaves, shredded

  1. Puree cheese, avocado, lemon juice and chilli sauce together. Divide mixture in half and spread over a third of each sheet of bread. Top evenly with chicken, tomato and lettuce. Roll up firmly, starting with filled end. Wrap tightly in plastic wrap and store in refrigerator until required.
