Vincotto is produced through the gentle, long simmering of the must from the Negroamaro and Malvasia grapes growing in the Province of Lecce. Once it reaches a fifth of its original volume it is poured into oak barrels and left to rest for 4 years. Vincotto comes in many varieties including Vincotto with Raspberries, Figs or with Lemons.
If unavailable vincotto can be substituted in this recipe with balsamic vinegar and a sprinkling of sugar.
