Green Sesame Salad with Yogurt Lime Dressing

Serves 8

Ingredients

  • 300g fresh asparagus spears
  • 150g snow peas
  • 150g green string beans
  • 3 zucchini, sliced into batons
  • 1 1/2 tablespoons toasted sesame seeds
  • YOGURT LIME DRESSING
  • 250g Australian natural yogurt
  • juice and grated rind of 1 lime
  • 2 tablespoons chopped fresh coriander
  • salt and cracked black pepper, to taste

Method

  1. Blanch vegetables and arrange on a long platter. Sprinkle with 1 tablespoon sesame seeds. Combine dressing ingredients and pour down the centre of vegetables. Sprinkle with remaining sesame seeds and salt and pepper to taste.
