Golden Shortcrust Pastry

Serves 8


  • 125g Australian butter
  • 1 1/2 cups plain flour
  • 1 egg yolk
  • 1 tablespoon water
  • juice of 1 lemon

  1. Rub butter into flour until mixture resembles fine breadcrumbs. Combine egg yolk, water and lemon juice. Blend into flour to form a firm dough. Knead on a lightly floured board. Cover and allow to rest for 30 minutes. Roll out and use as required.
