Gluten Free Shortcrust Pastry



  • 1 1/2 cups cornflour *
  • 1/2 cup soya flour
  • 125g Australian butter
  • 1 egg yolk
  • 1/4 cup water

  1. Sift cornflour and soya flour into a bowl, rub in butter with the fingertips to resemble fine breadcrumbs. Add egg yolk and water and mix to a dough. Knead thoroughly on lightly cornfloured board. Wrap and keep overnight or at least 2 hours before using as directed.
  2. FOR BAKED FLAN - Roll out pastry on a cornfloured board to line a buttered 20cm pie plate. Bake at 180 oC for 15-20 minutes or until cooked.

Tips / Handy Hints

* Note: Check brands as some cornflour is made from wheat.
