Gluten Free Plum Pudding

Serves 6


  • 1 cup Australian milk
  • 1 1/2 cups mixed dried fruit
  • 30g Australian butter
  • 2 tablespoons sugar
  • 2 eggs
  • 1 cup cornflour*
  • 1 1/2 teaspoons mixed spice
  • 1 1/2 teaspoons cinnamon
  • 2 teaspoons bicarbonate of soda
  • 1 egg
  • 1/4 cup caster sugar
  • 1 cup Australian milk
  • 1/4 teaspoon vanilla essence

  1. Bring milk, mixed fruit, butter and sugar to the boil in a saucepan. Allow to cool. Stir in eggs. Sift cornflour, spices and bicarbonate soda together. Fold into fruit mixture thoroughly. Spoon mixture into a buttered 4 cup pudding basin. Cover with buttered aluminium foil and tie securely with string. Place basin in a large saucepan containing 5cm boiling water. Cover and gently boil for 1 1/2 hours. Remove foil, turn onto suitable platter. Serve with custard sauce.
  3. Beat egg and sugar together. Heat milk slightly and pour over beaten egg. Return to top of double saucepan. Stir with wooden spoon until mixture thickens and coats back of spoon, approximately 15 minutes. Add vanilla essence. Serve hot or cold.

Tips / Handy Hints

*Always read labels as some cornflour is made from wheat.
