Gluten Free Pancakes

Makes 16 pancakes


  • 1 cup gluten free bread mix
  • 1 egg, beaten
  • 1 cup Australian milk

  1. Sift bread mix into a bowl. Make a well in the centre. Pour in the beaten egg and milk. Gradually stir to incorporate the flour into a smooth batter. Stand for 15 minutes. If the mixture becomes lumpy pour through a fine sieve before using. In a hot buttered 15cm pan, pour in sufficient batter to cover base thinly. When bubbles appear, turn and brown other side. Continue until all batter is used. Use as required.
