Gluten Free Ginger Cream Cookies

Ingredients

  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup sugar
  • FILLING
  • 125g Australian cream cheese
  • 2 tablespoons Australian butter
  • 1 cup caster sugar
  • 2 tablespoons finely chopped, preserved ginger

Method

  1. FILLING - Beat cream cheese and butter together. Beat in caster sugar. Blend in chopped ginger.
  2. Using the soya biscuit recipe (*see link), sift cinnamon, ginger and sugar into dry ingredients and proceed as directed. Refrigerate dough for 20 minutes then roll out to 3mm thickness. Cut into 5cm rounds and place on a well buttered baking tray. Bake at 190C for 8-12 minutes. Remove, cool and sandwich together with ginger filling.
