Gluten Free Fruity Scones


  • 1 1/2 cups cornflour *
  • 1/2 cup Australian powdered milk
  • 1 tablespoon pure icing sugar
  • 1 tablespoon gluten free baking powder
  • 30g Australian butter
  • 1/2 cup sultanas
  • 1 egg
  • 1/3 cup Australian milk

  1. Sift cornflour, milk powder, icing sugar and baking powder into a bowl. Rub in butter to resemble breadcrumbs. Stir sultanas through flour mixture. Lightly beat egg with milk. Add to flour mixture to make a soft dough. Knead lightly on a cornfloured board and roll out to 2cm thickness. Using a 4cm scone cutter, cut out scones, place on a buttered tray. Bake at 200oC for 10 minutes. Serve hot and buttered.

* Note: Check brands as some cornflour is made from wheat.
