Gluten Free Egg and Bacon Pie

Serves 8


  • 1 quantity gluten free shortcrust pastry (see recipe)
  • 6 eggs
  • 1/2 cup roughly chopped bacon
  • 2 teaspoons chopped parsley
  • seasonings to taste

  1. Divide pastry in half. Roll out half and line a buttered 23cm pie plate. Break eggs into pastry shell, add bacon and chopped parsley. Season. Roll out remaining pastry. Cover filling. Press edges firmly together, then trim edges of excess pastry. Cut three or four slits in pastry top. Bake at 190C for 30-35 minutes.
