Gluten Free Custard Powder Sponge

1 x 20cm round cake

Ingredients

  • 1 cup gluten free custard powder*
  • 1 teaspoon gluten free baking powder
  • 4 eggs, separated
  • 3/4 cup sugar
  • sweetened whipped Australian thickened cream
  • pure icing sugar, for dusting

Method

  1. Sift custard powder and baking powder together. Beat egg whites till stiff but not dry. Beat in egg yolks. Gradually beat in sugar till mixture forms a figure eight. Fold in dry ingredients. Divide between 2 well buttered 20cm sandwich pans. Bake at 180oC for 20-25 minutes. Turn out and cool on racks. Sandwich together with sweetened whipped cream. Dust top with icing sugar.

Tips / Handy Hints

*Always check the labels to ensure custard powder is made from cornflour, and not wheaten cornflour.
