Gluten Free Coconut Drops

Ingredients

  • 3 tablespoons Australian butter
  • 1/4 cup sugar
  • 1 egg
  • 3/4 cup cornflour *
  • 3/4 cup desiccated coconut
  • 1 teaspoon vanilla essence

Method

  1. Cream butter, sugar and egg together until light and fluffy. Fold in cornflour and coconut. Add vanilla essence. Drop on spoonfuls on buttered trays. Bake at 190C for 10-15 minutes.

Tips / Handy Hints

* Note: Check brands as some cornflour is made from wheat.
