Gluten Free Choc Mint Cookies

  • 2 tablespoons cocoa powder
  • 1/3 cup sugar
  • 2-3 tablespoons Australian milk
  • 125g Australian cream cheese
  • 2 tablespoons Australian butter
  • 1 1/2 cups pure icing sugar
  • 60g chocolate, melted
  • 1 tablespoon hot water
  • 2-3 drops of peppermint essence

  1. FILLING - Beat cream cheese and butter together, gradually adding icing sugar until mixture is light and fluffy. Blend in chocolate, water and peppermint essence.
  2. Using the soya biscuit recipe (*see link), sift cocoa with dry ingredients then add sugar. Proceed as directed. Refrigerate dough for 20 minutes. Roll out, cut and bake as directed. Cool and sandwich together with choc mint filling.
