Gluten Free Butter Sponge

Makes 1

Ingredients

  • 1 cup cornflour *
  • 1 1/2 teaspoons gluten free baking powder
  • 4 eggs, separated
  • 1/2 cup sugar
  • Heat together until butter melts:
  • 1 tablespoon Australian butter
  • 1 tablespoon water
  • 1/2 teaspoon vanilla essence

Method

  1. Sift cornflour and baking powder. Beat egg whites till stiff but not dry. Beat in egg yolks. Gradually beat in sugar till mixture becomes thick and glossy. Fold in dry ingredients lightly but thoroughly. Carefully add the liquid mixture. Divide between 2 buttered paper lined 20cm sandwich pans. Bake at 180oC for 20-25 minutes. Turn out onto a rack and cool.
  2. VARIATIONS:
  3. Orange - add 1 tablespoon grated orange rind
  4. Ginger - add 2 teaspoons ground ginger
  5. Cinnamon - add 2 teaspoons cinnamon

Tips / Handy Hints

* Note: Check brands as some cornflour is made from wheat.
