Gingered Yogurt Pears

Serves 4

Ingredients

  • 4 ripe pears
  • lemon juice
  • 1 cup Australian low fat natural yogurt
  • finely grated rind of 1/2 medium lemon
  • 1 tablespoon finely chopped, glace ginger
  • 1 small ripe pear, peeled, cored and pressed through a sieve
  • pinch cayenne
  • sprig of parsley

Method

  1. Carefully peel and halve pears. Remove core with a teaspoon. Sprinkle with a little lemon juice to prevent browning. Place hollow side down into 4 individual serving dishes. Combine remaining ingredients and mask over pears. Garnish with a sprinkling of cayenne pepper and a sprig of parsley. Serve as a light summer entree. Alternatively, omit cayenne and parsley and serve as a refreshing dessert, garnished with kiwi fruit slices and mandarin segments.
