Gingered Banana Cheesecake

Serves 6-8


  • 250g gingernut biscuits, crushed
  • 125g Australian butter, melted
  • 500g Australian cottage cheese
  • 1/2 cup caster sugar
  • 2 eggs, separated
  • 3 ripe bananas, mashed
  • 2 tablespoons glace ginger, chopped
  • 3 teaspoons gelatine
  • 4 tablespoons hot water
  • 300ml Australian thickened cream, lightly-whipped

  1. Combine biscuits with butter and press into the base and sides of a 20cm round springform pan. Refrigerate until required. In a large bowl, beat the cheese and sugar together until smooth. Gradually beat in egg yolks, banana and ginger. Dissolve gelatine in hot water, then fold into mixture. Beat egg whites until stiff, and fold into cheese mixture. Fold in cream. Pour into prepared crust and refrigerate until set.
