  • 125g Australian butter
  • 1 tablespoon grated ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • 1/2 cup brown sugar
  • 1/2 cup golden syrup
  • 1 egg, lightly beaten
  • 1/2 cup chopped raisins or sliced preserved ginger
  • 1/2 cup Australian milk, warmed
  • 1/2 teaspoon bicarbonate soda
  • 1 1/2 cups plain flour, sifted

  1. Cream butter, ginger, cinnamon and mixed spice together. Gradually add sugar, syrup, egg and raisins, beating well after adding each ingredient. Fold milk and combined bicarbonate soda and flour alternately and combine well. Butter and line base of a 14 x 22cm loaf pan with greaseproof paper and pour in mixture. Bake at 160C for 1 hour and 20 minutes. Garnish with preserved ginger. Serve hot or cold. NB - Flavour improves on keeping.
