Gado Gado with Spiced Peanut Sauce

Serves 8


  • 20g Australian butter
  • 1 clove garlic, crushed
  • 2 teaspoons finely grated fresh ginger
  • 1 onion, finely chopped
  • 1/2 - 1 teaspoon chopped fresh chilli
  • 1/2 cup chunky peanut butter
  • 125g Australian light cream cheese
  • 1 teaspoon orange rind
  • 2 eggs, hard boiled, cut into quarters
  • 1 kg assorted vegetable pieces, blanched
  • 2 Lebanese cucumbers, cut into sticks
  • 200g firm tofu, cut into pieces
  • 2 tablespoons flour mixed with 2 teaspoons curry powder
  • 1 tablespoon oil

  1. 1. Melt butter in a saucepan and saute garlic, ginger, onion and chilli. Add peanut butter, cream cheese and orange rind and stir until sauce comes to the boil.
  2. 2. Arrange eggs and vegetables on a platter. Toss tofu in flour and saute in hot oil until golden. Add tofu to platter with sauce.
  3. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
