Fruity Salad

Ingredients

  • 1 cup mandarin or orange segments
  • 1 red apple, chopped
  • 2 bananas, sliced
  • 1/2 cup unsweetened pineapple pieces
  • 1/2 cup sultanas
  • 1/2 cup sliced peaches
  • 2 orange halves, emptied
  • 2 tablespoons Australian non-fat yogurt
  • 2 tablespoons Australian reduced fat ricotta cheese
  • dessicated coconut, to garnish

Method

  1. Prepare the fruit and combine in a bowl with 1 banana. Spoon into empty orange halves. To make dressing, place yogurt, ricotta cheese and remaining banana in blender and blend until smooth. Drizzle over fruit. Garnish with dessicated coconut.
