Fruity Pilaf

Serves 4


  • 30g Australian butter
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 - 2 tablespoons curry powder
  • 1 1/2 cups brown rice
  • 1/4 cup sultanas
  • 1 x 425g can whole tomatoes
  • 2 cups orange juice
  • 2 cups fresh or frozen peas
  • 1 cup grated Australian cheddar cheese

  1. Melt butter in a large frying pan and fry garlic, onion and curry powder for 3-4 minutes. Add rice and cook 5 minutes. Stir in remaining ingredients except for the cheese. Cover well and simmer for 45 minutes or until rice is cooked and liquid evaporated. Stir through cheese. Serve with stir fried vegetables.
