Fruity Chicken

Serves 4


  • 4 chicken breasts, with skin removed
  • 1 medium onion, sliced into wedges
  • 1/2 cup halved dried apricots
  • 1/2 cup raisins
  • 1 teaspoon cracked black pepper
  • 1 bay leaf
  • 2 sprigs parsley
  • 1 tablespoon chopped chives
  • 1/2 cup Rose or white wine
  • 1/2 cup Australian light sour cream
  • 2 tablespoons cornflour

  1. Place all ingredients except the sour cream and cornflour into a frypan. Cover and simmer for 15 minutes or until the chicken is cooked. Blend sour cream with flour, and mix through sauce. Stir on low heat until thickened, do not allow to boil. Remove bay leaf and parsley. Serve with baked potatoes in their jackets, bundles of French beans and pumpkin.
