Fruity Cheese Strudel

Serves 6


  • 250g Australian cottage cheese
  • 1/4 cup Australian sweetened condensed milk
  • 1 egg, lightly beaten
  • juice of 1 lemon
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried apple
  • 1/2 cup chopped almonds
  • 1 sheet frozen puff pastry, thawed
  • 60g Australian butter, melted
  • icing sugar, for dusting

  1. 1. Combine cottage cheese and condensed milk together. Fold in beaten egg, lemon juice, dried fruits and almonds.
  2. 2. Spread filling over puff pastry sheet to within 1 cm of edges. Moisten edges with water and roll up. Brush with melted butter and bake at 200°C for 15 minutes. Reduce oven to 180°C and bake for a further 25-30 minutes, occasionally brushing with additional butter. Allow to cool slightly before dusting with icing sugar, slicing and serving.
