Fruity Cheese Strudel

Serves 6-8


  • 250g Australian continental-style cottage cheese
  • 1/4 cup Australian sweetened condensed milk
  • 1 egg, lightly beaten
  • juice of 1 lemon
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried apple
  • 1/2 cup chopped almonds
  • 1 sheet frozen puff pastry, thawed
  • 60g Australian butter, melted
  • 1 tablespoon icing sugar, sifted

  1. Combine cottage cheese and condensed milk together. Fold in beaten egg, lemon juice, dried fruits and almonds. Spread filling over pastry to within 1 cm of edges. Moisten edges with water and roll up. Brush with melted butter and bake at 200C for 15 minutes. Reduce oven to 180C and bake for a further 25-30 minutes, occasionally brushing with butter. Allow to cool slightly before dusting with icing sugar.
