Fruity Cheese Javelins

Serves 10


  • 4 eggs
  • 2 cups Australian skim milk
  • 1 1/2 cups flour
  • 400g stewed apples
  • grated rind of 1 lemon
  • squeeze of lemon juice
  • pinch of ground cloves
  • pinch of ground cinnamon
  • pinch of ground nutmeg
  • 250g Australian cottage cheese
  • 1/2 cup sultanas
  • SAUCE:
  • 1/2 cup sugar
  • juice of 1 lemon
  • juice of 2 oranges
  • finely sliced rind of 1 orange
  • 1 1/2 teaspoons cornflour mixed to a paste with water

  1. Whisk eggs and skim milk. Add sifted flour and whisk well. Cover and allow to stand one hour. Using a non-stick frying pan, pour in sufficient batter to form a 20cm pancake. Cook until golden, flip and cook other side - continue until all batter is used. Place two spoonfuls of filling at one end of each pancake and roll up into a sausage shape. Pour sauce over.
  2. FILLING - Mix all ingredients together.
  3. SAUCE - Caramelize sugar with 1 tablespoon of the lemon juice, then dissolve with rest of juices. Add orange rind, thicken with cornflour paste.
