Fruity Camembert Pork

Serves 4


  • 125g Australian camembert, finely chopped
  • 2 tablespoons dried apricots, finely chopped
  • 1/4 cup pecan nuts, finely chopped
  • 2 tablespoons fruit chutney
  • salt and pepper, to taste
  • 2 x 400g pork fillets

  1. Combine the camembert, apricots, nuts and 1 tablespoon of fruit chutney. Season. Make a cut along the length of the fillet, ensuring not to cut all the way through. Fill with the camembert mixture and reshape. Secure with skewers. Brush with remaining fruit chutney. Bake at 180ºC for 15-20 minutes. Allow to rest for 5 minutes before carving. Serve with a baked potato and vegetables.

Tips / Handy Hints

Prepare as above. Secure with toothpicks. Wrap tightly in plastic wrap. Cook each fillet on High(100%) for 4 minutes. Allow to stand for 5 minutes before carving.
