Fruity Bran Slice

Makes 20 pieces


  • 1 cup processed bran
  • 1 cup mixed dried fruit
  • 2 cups Australian low fat milk, heated
  • 1 egg
  • 1/4 cup honey
  • 1 1/2 cups self raising flour
  • 100g Australian cream cheese
  • grated rind of 1 orange
  • 2 tablespoons icing sugar
  • cinnamon, for dusting

  1. Soak bran and fruit in warmed milk and allow to cool to room temperature. Add egg and honey, mix well. Stir in sifted flour thoroughly. Pour into a lightly buttered and lined 18 x 28cm slab pan. Bake at 180oC for 30-35 minutes or until cooked. Remove from pan to cool. Beat all icing ingredients together until smooth. Cover slice with icing and dust with cinnamon. Serve cut into pieces.
