Fruit Salad Flummery

Serves 4


  • 1 pkt low-joule lemon or pineapple jelly crystals
  • 400g can unsweetened fruit salad, drained, juice reserved
  • 1 cup Australian low fat natural yogurt
  • slivered almonds, for garnish

  1. Dissolve jelly in 1 cup of boiling water. Add 1 cup reserved juice and refrigerate until semi-set. Beat until light and fluffy. Add yogurt and beat well until combined. Layer the yogurt mixture and fruit salad into 4 parfait glasses, finishing with yogurt mixture. Refrigerate until set. Sprinkle with slivered almonds. Serve.
